Our matcha comes from Jingshan, Hangzhou, a historic tea-growing region with a long tradition of Chinese tea cultivation. What we love most about this matcha is its flavor. Instead of being aggressively grassy or bitter, it has a naturally creamy, nutty character, with notes of pistachio, roasted nuts, and soft bean-like sweetness. The texture is smooth and rounded, with gentle umami and a clean finish.
A lot of that character comes from what happens after harvest. The leaves are steamed soon after picking to help preserve their fresh color, aroma, and amino acids, then carefully processed and rested under controlled cold-storage conditions so the flavor can settle and become more consistent. Different lots can then be blended to maintain a smooth, recognizable profile from batch to batch. The result is a matcha that feels creamy rather than sharp, nutty rather than overly vegetal, and balanced enough to enjoy both straight and with milk.

When we were sourcing matcha, we weren’t simply looking for the deepest green color or the strongest umami. We were looking for a very specific flavor profile: something smooth and creamy, with a naturally nutty character and a soft bean-like aroma, rather than being aggressively grassy or bitter.
That’s what stood out to us about the matcha from Jingshan. The tea has a naturally rounded character, with notes that remind us of pistachio, roasted nuts, and fresh soybeans, followed by a gentle sweetness and clean finish.
The tea plants are shaded before harvest, helping the leaves retain more amino acids and develop a softer, fuller taste. After picking, the leaves are quickly steamed to stop oxidation and preserve their fresh character before being carefully processed and ground into matcha.
